"MEXICAN FRUIT CAKE" | |
2 c. plain flour 2 eggs 2 c. sugar 1 tsp. baking soda 1 (20 oz.) can crushed pineapple and juice 1 c. chopped pecans Mix above ingredients with spoon until blended. Grease and flour 9 x 13 pan. Bake at 350 degrees for 30-40 minutes. CREAM CHEESE ICING: 1 (8 oz.) pkg. cream cheese 1 stick butter 1 tsp. vanilla 1/2 to 1 c. pecans 3/4 box powdered sugar Mix all together and spread over cake. |
