GRITS AND CHEESE BISCUITS 
1 1/2 c. all purpose flour
1/2 c. quick grits, uncooked (optional)
1/2 c. (1 stick) butter
1 c. (4 oz.) shredded Cheddar cheese
1/2 c. milk
4 tsp. baking powder
1/4 tsp. salt

Heat oven to 425 degrees. Combine all dry ingredients; cut in butter until mixture resembles coarse crumbs. Stir in cheese; add milk, mixing just until dry ingredients are moistened. Shape dough to form a ball; knead gently on lightly floured surface 3 or 4 times. Roll out dough to form 8 inch square. Cut into four 2 inch wide strips; cut each strip crosswise into 4 pieces. Place biscuts about 1 inch apart on ungreased cookie. Bake for 12 to 14 minutes or until lightly browned. Makes 16 biscuits. Grits may be omitted for cheese biscuits.
