CARROT BARS 
4 eggs
1 c. oil
3 c. carrots or beets
2 c. sugar
2 c. flour
2 tsp. cinnamon
1 tsp. salt
2 tsp. baking soda
2 tsp. vanilla

In a blender mix eggs, oil, carrots, sugar, cinnamon, baking soda, salt and vanilla; mix well. Add flour and mix well.

Pour into jelly roll or cake pan (9x13). Bake in 350 degree oven for 35-40 minutes. Serve with Cool Whip or frosting.
