HUMMINGBIRD CAKE 
1 box yellow cake mix
1 (15 oz.) can crushed pineapple & juice
3 eggs
1/4 c. vegetable oil
1 stick butter
1 to 1 1/2 c. pecan pieces
1 tsp. vanilla flavoring
1 c. coconut (optional)

Mix above ingredients. Grease and flour pan. Bake at 375 degrees for 35 to 40 minutes. Top with cream cheese frosting.
