WHOLE WHEAT EGG BREAD | |
2 c. milk, scalded 1/2 c. butter 1 tsp. salt 1/2 c. honey or brown sugar 1 yeast 1 tsp. honey 1/4 c. warm water 4-5 c. whole wheat or graham flour 4 lg. eggs, separated 1/2 tsp. baking soda Pour the scalded milk over the butter, salt, and 1/2 cup honey or brown sugar. Let cool to lukewarm. Dissolve the yeast and one teaspoon honey in the 1/4 cup flour and egg. Add yolks into the liquid mixture just until generously moistened. Beat the egg whites until very stiff, sprinkle the soda over the beaten whites and gently fold into the batter. Cover and let rise until doubled. Stir down and let rise again doubled. (This is necessary to obtain a light loaf). Turn into 2 buttered 7 inch loaf pans and let rise again until doubled. Bake in a 350 degree oven 30-40 minutes until browned and done. |
