FAJITAS 
1 lb. round steak or chicken
1 clove garlic, crushed
1 c. lemon juice
1 green pepper
1 med. onion
1/2 lb. med. cheddar cheese
2 tbsp. oil
1 can green chiles
1 pkg. of 10 flour tortillas, lg.
Salsa, sour cream, chopped lettuce, tomatoes as desired

Slice meat into pencil thin strips and marinate in lemon juice and garlic for 20 minutes. While marinating, slice green pepper and onion and grate cheese. Quick fry meat in oil. Remove. Saute green pepper, onion and leave crunchy. Add cheese and green chilies and cook until melted. To each tortilla add strips of meat and drop spoonfuls of vegetable/cheese mixture. Roll up shells and place in casserole pan. Bake 8 to 10 minutes in 350 degree oven. Serve with salsa, sour cream, guacamole, lettuce, etc.
