EGGPLANT PARMESAN 
2 sm. or one large eggplant
2 eggs, beaten
Flour or bread crumbs
1 qt. spaghetti sauce, your favorite
8 oz. shredded Mozzarella cheese
Grated romano cheese to taste
Cooking oil

Slice eggplant into 1/8 inch rounds. Dip in beaten eggs and roll in flour or breadcrumbs, whichever you prefer. Fry in cooking oil for about 1 minute on each side. Drain any excess oil. Alternate in baking pan (which has been sprayed with Pam,) eggplant, spaghetti sauce, grated Romano cheese and Mozzarella cheese. Cover with foil, bake at 350 degrees for 45 minutes. Remove foil during last 10 minutes to brown the top.

CHEESE SUBSTITUTES:

Grated Cheddar cheese
Grated Swiss cheese
Sliced American cheese
Sliced Velvetta cheese

Makes 4 to 6 servings.
