CHEESE SCONES 
8 oz. self-rising flour
1/4 tsp. salt
1 oz. butter
4 oz. cheese
1/4 pt. milk
1/2 tsp. dry mustard

Sift together flour, salt and mustard. Rub in butter until mixture feels like bread crumbs. Finely grate cheese and add 3 1/2 ounces to the flour mixture.

Bind together with milk to a soft dough. Roll out on floured table to 1/2 inch thinness and cut into 15 rounds with a circle cutter. Place on greased baking sheet. Brush with milk and sprinkle with remaining cheese.

Bake at 325 for 12 minutes.
