CINNAMON ALMOND COOKIES 
1/2 c. butter
3/4 c. sugar
1 lg. egg
3/4 c. ground almonds
1/4 tsp. almond extract
1 2/3 c. flour
1 tsp. cinnamon

In a medium bowl, cream butter and sugar until smooth. Stir in egg; add almonds and extract; mix well. Stir in flour and cinnamon. Chill dough 45 to 60 minutes. Divide dough into thirds Roll out onto very lightly floured surface to 1/8 inch thick. Cut. Place on ungreased cookie sheet. Bake at 375 degrees, 10 to 12 minutes or until edges are brown.
