FRENCH ALMOND COOKIES 
1 c. butter
1 1/4 c. dark brown sugar
1 1/4 c. white sugar
2 eggs, beaten
1 tbsp. honey
1 c. blanched, ground almonds
1 tsp. baking soda
3 c. flour
1/4 tsp. salt

Mix in order given. Pinch off piece of dough the size of a walnut. Roll oblong shape in hands. Place an almond on each cookie. Grease cookie sheet. Place cookies 2 inches apart. Bake at 350 degrees about 10 minutes or until golden brown.

For Christmas, I make these cookies around Thanksgiving. The longer they stand, the better the flavor (they get sort of chewy).
