TWICE BAKED POTATOES WITH
BROCCOLI
 
4 med. baking potatoes
2 tbsp. butter
1/4 c. skim milk
1/2 tsp. garlic powder
1/4 tsp. black pepper
1/4 c. chopped broccoli flowerets
1/4 c. finely chopped red pepper

Pierce potato skin with fork. Arrange potatoes on plate, microwave on High (100% power) for 14 minutes to 17 minutes or until fork tender. Re-arrange once after 7 minutes. Let stand 5 minutes. Cut a thin slice off top of each potato. Carefully scoop out insides, reserving shells. In large bowl with mixer, beat potato and butter until creamy. Gradually beat in milk and pepper, stir in broccoli and red pepper. Spoon over shells, arrange on plate. Microwave on High for 4 to 5 minutes or until hot, rotating plate 1/2 turn after 2 minutes. 284 calories, 78 mg. sodium, 0 cholesterol, 6 gm fat, 5 mg. fiber.
