J.'S SWEET POTATO PIE 
3 eggs
1/2 c. sugar
1/3 c. milk
1/4 c. melted butter
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt
1 1/2 c. mashed sweet potatoes
2 tbsp. lemon or orange juice
1 unbaked pie shell
1/3 c. pecan halves (opt.)

Preheat oven to 400 degrees. Beat eggs and sugar. Add milk, butter, vanilla, cinnamon, nutmeg and salt. Blend well. Stir in sweet potatoes and lemon juice. Pour into unbaked pie shell. Garnish with pecan halves. Bake for 10 minutes. Reduce heat to 375 degrees and bake 40 minutes. Serve plain or topped with Cool Whip. Makes 6 to 8 servings.
