1 (8 inch) unbaked pie shell
1 1/2 c. boiled, mashed sweet potatoes
1 1/2 c. sugar
3 eggs
1 cube butter
1/4 c. evaporated milk
2 tsp. vanilla extract
2 tsp. nutmeg

Before measuring sweet potatoes, mash through sieve to remove strings. In large bowl, mix potatoes (while hot), sugar, eggs, butter, milk and nutmeg. Mix well. Add vanilla. Mix. Pour into unbaked pie shell and bake at 350 degrees for about 1 hour.
