NUT CAKE OR FRUIT CAKE 
1 lb. butter
2 1/2 c. sugar
6 eggs
1 (1 oz.) bottle lemon flavoring
1 box dates
1 (8 oz.) candied cherries
1 (8 oz.) candied pineapple
Coconut (optional)
6 c. pecans
4 1/2 c. flour

Mix together butter, sugar, eggs and lemon flavoring. Add dates, cherries, pineapple and nuts which has been coated with 1/2 cup flour. Add the 4 cups flour to the first mixture before adding fruit. Bake about 200 or 225 degrees for 4 1/2 to 5 hours. Makes a large cake. Can use tube pan or loaf pans.
