CREOLE POTATO SALAD | |
5 lbs. med. potatoes 3 eggs 2 green onions, finely chopped 1 med. onion, finely chopped 1 1/4 c. mayonnaise 1 1/2 tbsp. yellow mustard 2 1/2 tbsp. Zatarain's creole mustard Salt and pepper to taste Place potatoes and eggs in large pot and boil until done. (About 20 to 25 minutes). When done remove from pot and let cool while preparing dressing. Mix mayonnaise, mustards, salt and pepper then add to this the finely chopped onion and scallion. Stir well. Peel potatoes and eggs and chop into small pieces. Place in a large bowl and smooth dressing over potatoes evenly. Gently turn until all potatoes are uniformly moist. Pack down in bowl. Garnish with paprika. |
