CREOLE POTATO SALAD 
6 white potatoes
1/4 c. chopped onions
1/4 c. chopped red bell pepper
2 tsp. Dijon mustard
1/4 tsp. white pepper
6 hard boiled eggs
1/4 c. chopped celery
1 tsp. cayenne
1.25 tsp. kosher salt

Boil the potatoes, peel and chop them coarsely. Chop the eggs and combine the potatoes, eggs and the rest of the ingredients in a large bowl. Add the Green Onion Dressing a tablespoon at a time until the consistency is correct. Serves 6.

Note: You will probably NOT need the entire salad dressing recipe.

GREEN ONION SALAD DRESSING:

1 egg plus 1 egg yolk
1/2 c. chopped scallions
1 tbsp. white vinegar
1/8 tsp. white pepper
9 oz. corn oil
1.5 tbsp. Dijon mustard
1/4 tsp. kosher salt

In a food processor or blender, beat the egg and egg yolk until frothy. Add the oil in a thin stream. When the mixture is thick and creamy, add the remaining ingredients and blend thoroughly. Serves 6.

Note: To hard boil eggs - put room temperature eggs in a bowl, cover them with cold water and bring to a boil. Reduce the heat and simmer for 15 minutes. Plunge the cooked eggs into cold water. If the eggs come out of the refrigerator, cook them for 17 minutes.
