APPLE CANDY | |
8 apples 1/2 c. water 4 env. unflavored gelatin 4 c. sugar 1 c. nutmeats, coarsely chopped 1 tsp. vanilla 1/4 tsp. rose extract Powdered sugar Wash, peel, quarter and core apples. Place in a 2 quart saucepan with water and simmer until mushy. Set aside to cool. Measure out 1 cup of this applesauce and add gelatin to dissolve. Place 1 1/2 cups of the applesauce in saucepan, add sugar and bring to a boil. Add applesauce-gelatin mixture and boil hard for 20 minutes. Stir frequently so mixture will not stick or burn. Remove from heat. Add nutmeats, vanilla and rose extract. Pour into buttered flat pan. Cool. Let stand for several hours or overnight. Cut and roll in powdered sugar. Makes about 48 pieces. |
