PORKCHOPS A LA BARBARA 
2-3 lbs center cut porkchops
1/8 cup vegetable oil
8 oz can stewed tomatoes
1 large onion, thickly sliced
1 green pepper, thinly sliced
4-5 all purpose potatoes, peeled and sliced (medium thickness)

Brown chops in hot oil. Add onion slices, salt and pepper (to taste). Cover chops with potatoes. Pour tomatoes with liquid over all.

Simmer 35-40 minutes until chops are thoroughly cooked. (Add a little water, if dry).

Arrange green pepper slices on top. Cook another 5 minutes.
