BAKED CHICKEN REUBEN 
4 whole broiler-fryer chicken breasts, halved and boned
1/8 tsp. pepper
1 (16 oz.) pkg. sauerkraut, rinsed and drained very well
4 slices (4 x 6 inches) natural Swiss cheese
1 1/4 c. bottled Thousand Island salad dressing
1 tbsp. chopped parsley

In a greased baking pan, place chicken and sprinkle with pepper. Place sauerkraut over chicken; top with Swiss cheese. Pour dressing evenly over cheese. Cover with aluminum foil and bake in a preheated 325 degree oven for about 90 minutes or until a fork can be inserted in chicken with ease. Sprinkle with parsley and serve.
