FRENCH BREAD (No Cholesterol) 
2 c. warm water
1 pkg. yeast
1 tbsp. sugar
2 tsp. salt
5 1/2 c. all-purpose flour
Egg white
Sesame seeds

Dissolve yeast in warm water. Add sugar, salt and 3 cups flour. Beat until smooth and shiny. Then add 2 1/2 cups more of flour.

Sprinkle about 1/4 cup flour on board and knead dough until smooth and satiny. Let rise in greased bowl until double. Punch down, divide into halves. Let rest 5 minutes. Then shape in two large or three small loaves.

Place on baking sheet that has been dusted with cornmeal. Cut diagonal slashes and brush with foamy egg whites. Sprinkle with sesame seeds. Allow to rise for about an hour, then bake at 425 degrees for 30-35 minutes.
