CIOPPINO 
1 lg. onion, thinly sliced
1 c. chopped green onions
3 cloves garlic, finely chopped
1/2 c. parsley, finely chopped
1 bell pepper, seeded and diced
3 c. tomato sauce
1 c. dry white wine
1 c. water
1/4 tsp. crushed thyme
1/4 tsp. crushed rosemary
1 tsp. salt
1/4 tsp. black pepper
1 bay leaf
1 lb. crab or firm white fish
1 lb. shrimp
16 scallops or clams

Cook onions and garlic, covered, over low heat until soft; stir frequently. Add remaining ingredients, except seafood, and mix well. Continue to simmer, covered, for an hour. Add seafood and cook, covered, for 8-10 minutes or until shellfish open. Serves 8.
