BAKED BROCCOLI MAC AND CHEESE 
2 (16 oz. ea.) boxes elbow macaroni
2 (10 oz. ea.) cans broccoli and cheese soup
3 (1 lb. ea.) pkgs. NY extra sharp cheddar cheese, diced
1 (12 oz.) can evaporated milk
1/4 cup bread crumbs (Progresso)
1/2 cup (1 stick) butter
salt and pepper, to taste (optional)

Prepare large baking dish. Spray with non-stick cooking spray (Pam). Boil salted water then add macaroni till half way cooked. Drain.

Add all ingredients to pot except bread crumbs and butter. Mix well. Season with salt and pepper, if desired.

Pour into prepared casserole dish. Sprinkle top of casserole with bread crumbs and put dollops of butter all over top.

Bake at 350°F for 45 minutes. Remove when golden brown. Let sit for 5 to 8 minutes to settle.

Serves a large family (5 to 8) or more.
