CRAB MEAT AU GRATIN 
3/4 lb. butter
1 1/2 c. flour
3 qt. milk
5 drops Tabasco
3/4 c. sherry wine
4 tsp. salt
3/4 lb. sharp cheddar cheese, or more
5 lb. crab meat (deluxe OR regular OR Alaskian King crab); use juice
Parsley, chopped or dry

Make cream sauce, then add Cheddar cheese (may need more salt). Fold in crab meat, add chopped or dry parsley. Mix in sherry wine. Put in shells or individual casserole. Sprinkle Parmesan cheese over top (a must or it won't brown). Bake in 450 degree oven until bubbly and brown. Serves 16-18.
