SQUASH SOUFFLE 
2 c. yellow squash
1 c. milk
2 tbsp. dry onion soup mix
1/2 c. grated cheese
2 tbsp. butter
1 c. dry bread crumbs
Salt & pepper to taste

Cook squash, drain and mash well. Add butter, milk and pour over bread crumbs. Mix well. Place in baking dish and top with grated cheese. Bake at 325 degrees until set. Serves 4.
