CHEESECAKE TARTS 
3 (8 oz.) softened cream cheese
5 eggs
1 c. sugar
1 tsp. vanilla

Mix cheese, add eggs, sugar and vanilla. Fill 3/4 full. Use foil lined cupcake papers. Bake at 325 degrees for 25 minutes. If using small cupcake papers, bake 15 to 20 minutes. Remove from oven and let stand until center sinks. Add filling below and return to oven for 5 minutes.

FILLING:

1 c. sour cream
1/2 c. sugar
Food coloring if desired

Mix. Make 20 regular size; 40 to 45 small size.
