RED OR CINNAMON PICKLES 
2 gallon large unpeeled (1/2 inch) cucumbers
2 c. lime
8 1/2 qt. water
1 c. vinegar
1 sm. bottle red food coloring
1 tbsp. alum

Remove center and make a round hole. Mix lime and water. Pour over cucumber rings. Let stand for 24 hours, covered. After 24 hours rinse cucumber rings until water is clear.

Cover with ice water and let stand for 3 hours. Drain off water. Mix vinegar, food coloring, and slum and add enough water to cover rings. Simmer rings for 2 hours. Drain off liquid and discard.

SYRUP:

3 1/2 c. vinegar
3 1/2 c. water
11 c. sugar
8 cinnamon sticks
24-26 oz. red hot cinnamon candies

Mix vinegar, water, sugar, cinnamon sticks and red hot candies. Bring this mixture to boil. Pour over cucumbers and let stand 24 hours. Drain off mixture and add 1 cup sugar to mixture and bring back to a boil. Pour over cucumbers again; let stand 24 hours. Do this one more time (3 in all). At last put cucumbers rings in jars.

Bring the mixture to a boil and pour over cucumbers to cover and seal jars. Seal jars; seal good. You can cut the cucumber in long strips. But don't use seeds of cucumbers.
