CINNAMON RINGS | |
2 gallons lg. green cucumbers 8 1/2 qt. water 2 c. pickling salt 7 c. vinegar 1 tbsp. powdered alum 12 c. sugar 4 sticks cinnamon 1 tsp. green food color Cut unpeeled cucumbers in thick slices (should be 2 gallons). Add salt and water. Let stand 5 days. Drain. Combine 1 cup vinegar, alum and food color in kettle. Add cucumber rings and water to cover. Simmer 2 hours. (May divide in 2 parts and make some red, and some green.) Drain. make syrup; bring to a boil 6 cups vinegar, 2 cups water, the sugar and the cinnamon sticks. Pour over the rings. Let stand overnight, drain and reheat syrup and pour over rings. Reheat for 3 days. On the third day pack rings in hot jars. Pour boiling syrup in jars and seal. Makes nine pints. |
