1 lg. eggplant
1 med. onion
Pepper
1 box stuffing

Steam eggplant until soft. Mash. Add onion and pepper. Cook stuffing according to directions on package. Mix all and put in pan and bake in 400 degree oven for 15 minutes, covered.
