BAKED EGGPLANT 
1 eggplant
2 eggs
1/2 c. grated cheese
Salt and pepper
1 onion
4 tbsp. milk
1 tbsp. Worcestershire sauce
Buttered crumbs

Peel and boil eggplant and onion. Mash. Beat eggs with milk, cheese, sauce and salt and pepper. Add this to eggplant. Place in baking dish and cover with crumbs. Bake at 350 degrees for 30 minutes.
