PIMIENTO CHEESE SALAD 
1 lg. can crushed pineapple
1 lb. cheese, grated
1 lg. can pimientos, chopped
1/2 c. cold water
1 c. cream, whipped
1 c. mayonnaise
1/2 c. sugar
1 lemon
2 pkgs. Knox gelatin

Drain pineapple (save juice to boil). Dissolve gelatin in cold water. Mix lemon juice, pineapple juice and sugar; bring to boil and pour over gelatin.

As it begins to set, whip until light. Fold in pineapple, cheese, pimientos, whipped cream and mayonnaise. Place in salad mold and cool in refrigerator until firm.
