GREEN TOMATO CHUTNEY | |
5 lb. green tomatoes 1 lb. onions or 2 lg. onions 1 tsp. peppercorns 1 tsp. salt 1 lb. sugar 1 1/2 c. vinegar 1/4 c. raisins 1/4 c. Sultanas Slice the tomatoes and chop the onions and mix together in a basin with the peppercorns and salt. Allow this to stand overnight. Next day boil up the sugar in the vinegar, then add the raisin (which may be chopped) and the Sultanas. Simmer for 5 minutes, then add the tomatoes and onions and simmer until thick, about 40 minutes. Pour into hot jars and seal. COMMENTS: Green tomato chutney is a good way to use green tomatoes leftover at the end of summer growing. |
