ORANGE-KISSED BRUSSELS SPROUTS 
1 lb. Brussels sprouts, trimmed and halved
1 tsp. grated orange rind
1/2 c. fresh orange juice
1/4 tsp. salt
1/8 tsp. pepper
1 tsp. butter

When you grate the orange rind, avoid the bitter tasting white layer, or pith, just beneath the surface.

Steam the Brussels sprouts, covered, 15 minutes or until tender. Drain Brussels sprouts and return to pan. Add orange rind, orange juice, salt and pepper. Add the butter and cook over medium heat 1 minute, stirring constantly.

Yields 4 servings.
