ORANGE MERINGUE PIE | |
1 (9 inch) baked pie shell 1 1/4 c. sugar 7 tbsp. cornstarch 1/4 tsp. salt 1 1/2 c. warm water 3 eggs, separated 1 tbsp. grated orange rind 1/4 tsp. lime or lemon rind 1/2 c. orange juice 1 tbsp. lemon juice 2 tbsp. butter 6 tbsp. sugar Mix sugar, cornstarch, and salt in heavy saucepan. Stir in warm water. Bring to boiling over low heat. Cook and stir 8 to 10 minutes until smooth and thickened. Remove from heat. Beat egg yolks slightly. Stir in several spoonfuls of hot mixture. Return to saucepan and cook 4 to 5 minutes while stirring. Remove from heat. Stir in rinds, juices, and butter. When butter is melted, pour mixture into pie shell. Beat egg whites until stiff. Gradually add 6 tablespoons sugar, beating until stiff. Spoon lightly on pie. Cover filling completely. Bake at 400 degrees for 5 minutes or until golden brown. Cool and garnish with grated orange rind. |
