ORANGE MERINGUE PIE | |
1 c. orange juice 1 c. orange sections, cut in small pieces 2 tbsp. grated orange rind 1 c. sugar 5 tbsp. corn starch 3 egg yolks 2 tbsp. lemon juice 2 tbsp. butter Combine orange juice, sections, rind, sugar and corn starch. Cook on low heat until clear. Add a little hot mixture to beaten egg yolks. Return to hot mixture and cook about 5 minutes longer. Remove from heat. Blend in lemon juice and butter. Pour into baked pie shell. Be sure filling and shell are both hot or both cold. Cover filling with meringue made from the 3 egg whites, beaten until stiff with a few grains of salt, and folding in 6 tablespoons white sugar. Beat until sugar is dissolved. Brown in 350 degree oven for about 15 minutes, until lightly browned. |
