CASSEROLE BAKE 
1 lb. Italian sausage
3 c. Mozzarella cheese, grated
1/2 c. dry Bisquick
1/2 c. Parmesan cheese
3 c. zucchini, chopped
1/2 c. onion
3 eggs
1/2 c. oil, (optional)
Salt & Pepper
Garlic
Tomatoes & mushrooms, (optional)

Brown the Italian sausage and onions. Put in large bowl, add salt (optional) and pepper, Bisquick, eggs, zucchini and cheese. Mix together. Put in 9 x 13 inch pan. Bake at 350 degrees for 45 minutes. Serves 8.

NOTE: I added 2 cups of tomatoes, and a couple of cloves of garlic. Recipe also calls for oil, I did not add that because I did not drain the sausage.
