GROUND BEEF & POTATO CASSEROLE 
1 1/2 lb. ground beef
6 med. white potatoes
1 tsp. chili powder
1 tsp. salt
1/2 c. tomato sauce
Cheese slices

Put potatoes on stove to boil. Brown ground beef; drain off excess fat. Add salt, chili powder and sauce to ground beef and potato slices in casserole dish, ending with potatoes. Top with cheese slices. Bake in 350 degree oven until cheese melts.

This was really good! My VERY picky teenage daughter had two helpings. (She said she almost went back for thirds.) I made it by the instructions, but stirred in a handful of frozen seasoning veggies (onion, celery, bell pepper and carrots) and a couple of cloves of minced garlic, while I was browning the ground beef. It had more flavor than I was expecting. I'll be making it again, but I might play around with some add-ins. Maybe tomatoes w/green chilies, sour cream, and a bit of salsa...
