CARROT CASSEROLE 
1 tbsp. butter
1 med. chopped onion
1 can cream of chicken soup
1/2 c. shredded mild Cheddar cheese
2 cans fresh-like carrots (or 1 lb. cooked sliced fresh)
1 pkg. chicken flavor stove-top stuffing

Saute onion in butter. Add soup (dilute with 1/2 can milk) and cheese. Mix together and add carrots and mix well. Put into casserole and top with prepared stuffing. Bake at 350 degrees for 20-25 minutes.
