APRICOT NECTAR MOLD 
1 lg. pkg. lemon gelatin
1/2 c. grated carrots
2 c. hot apricot nectar
1/2 c. pineapple, diced

Dissolve gelatin in hot nectar. Chill until thick and syrupy. Fold in carrots and pineapple. Turn into mold and chill until firm.
