ONION SOUP A LA SUSIE | |
4 med. onions 1-2 tbsp. chopped green pepper 3 c. chicken broth 1 c. tomato juice (V-8) 1-2 med. carrots 1 lg. potato 1 clove garlic, chopped 4 tbsp. butter 4 tsp. flour 1 bay leaf 2 whole cloves Lemon juice (to taste) Put chicken broth and tomato juice in large pan (1 1/2 quart). Add bay leaf and cloves. Begin heating liquid. Melt butter in fry pan - saute onions and green pepper and garlic. Gradually sprinkle flour into pan. Add onion mixture to liquid in pan. Add carrots and potato. Cook for several hours. Season to taste with salt, pepper, lemon juice, fresh parsley, basil, curry, red pepper. |
