APRICOT-CREAM CHEESE SPREAD | |
1 c. chopped dried apricots 3/4 c. water 2 (8 oz.) pkgs. cream cheese, softened 3/4 c. orange marmalade 2 tbsp. milk 1 c. chopped pecans Combine apricots and water in a small saucepan. Bring to a boil; cover, reduce heat and simmer 10 minutes. Drain. Beat cream cheese at medium speed of electric mixer until smooth and fluffy; stir in apricots and remaining ingredients. Serve on crackers or bread. Yield: about 3 1/2 cups. |
