DAD'S OATMEAL COOKIES 
1 c. sugar
1 c. shortening
2 eggs
1/2 c. milk
2 c. oatmeal
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
1 tsp. vanilla

Preheat oven to 375°F.

Cream sugar and shortening. Beat in eggs. Add milk alternatively with oatmeal. Stir in remaining ingredients.

Drop by tablespoonfuls onto a parchment paper or silicone sheet lined cookie sheet for 8-11 minutes, depending on size of cookies. Bake only until set, do not brown. If cookies are browning before center is done, reduce heat to 350°F.

Transfer cookies to a wire wrap to cool for 20 minutes before storing in an air-tight container.
