Heat 3/4 cup olive oil in heavy medium skillet. Add capers that have been drained and patted dry and fry until crisp, about 4 minutes. Remove capers using slotted spoon and drain thoroughly on paper towels. Transfer olive oil to heavy large skillet (reserve remaining oil for another use) and heat over medium high heat. Add spinach and cook until melted. Season to taste with salt, pepper and lemon juice.
Set 1 layered fish on each plate. Sprinkle with capers. Surround with spinach. Serve with lemon wedges.
