FILLED COOKIES 
Cookie:

1 c. sugar
1/2 c. shortening
1 egg
2 tsp. cream of tartar
1 tsp. baking soda
1/2 c. milk
3 1/2 c. flour
1 tsp. nutmeg
1 tsp. vanilla

Filling:

1 c. raisins, ground
1/2 c. sugar
1/2 c. water
1 tbsp. flour
pinch of salt

Cookie: Mix dough until smooth, shape into a ball and roll out with rolling pin. Cut into circles with cookie cutter. Reserve half of the "circles" for covers. Put small amount of filling (directions follow) in center of circle, cover with another circle and seal edges.

Bake at 375°F for about 12 to 14 minutes on a greased cookie sheet.

Filling Directions: Mix all ingredients and cook over medium heat until thick. Let cool slightly before filling cookie circles.
