WILTED LETTUCE 
6 slices bacon (chopped)
2 or 3 tbsp. bacon grease
2 tbsp. vinegar
1/4 c. sugar
1/4 c. water
1 tsp. salt
3 green onions (chopped)
1 gal. lettuce (oak leaf, buttercrunch, etc.)

Cook bacon until done, remove bacon and reserve. Measure bacon grease, don't use more than 3 tablespoons. Add vinegar, sugar, water and salt, stir to dissolve.

Rinse lettuce in cold water, pick over lettuce removing any bad leaves or foreign matter. Mix the chopped green onions with the lettuce in a large mixing bowl.

Heat the liquid to boiling and cook on high heat for abut 30 seconds. Pour over lettuce mixture, toss to mix. Top with reserved bacon.
