GRANDMA'S POTATO SALAD | |
7 med. potatoes, cooked, peeled, and coarsely chopped (7 c.) 3 hard-cooked eggs, chopped 1/4 c. finely chopped sweet pickles 1/2 c. mayonnaise or salad dressing 1/4 c. sweet pickle juice 1 tsp. salt 1/8 tsp. pepper 1 tsp. celery seed 1/8 tsp. garlic salt In large bowl combine potatoes, eggs, and pickles. Stir together mayonnaise or salad dressing, pickle juice, salt, pepper, celery seed, and garlic salt. Gently fold mayonnaise mixture into potato mixture. Chill. Garnish with additional hard-cooked egg slices, if desired. Makes 6 to 8 servings. |
