WILTED LETTUCE 
1 lg. bowl clean, fresh garden lettuce
1 doz. green onions, sliced, including tops
1 lb. bacon
1/2 c. (or more, to taste) vinegar
2 eggs

Cut bacon into pieces and fry until crisp. Add 2 cups water and bring to a boil. Make a thickening of 2 eggs, flour and water. Add to the boiling bacon and water mixture. Cook, stirring constantly until thickened. Pour mixture over lettuce and toss until wilted. Serve over fork-mashed boiled potatoes.
