SAIMIEN SALAD 
1 pkg. saimien, boiled, rinsed and drained
1/2 lg. head lettuce, shredded
2-4 c. ham, pork, shredded chicken or any leftover meat, cut into strips
3 sm. green onions, chopped finely

SAUCE:

3 tbsp. sesame seeds, toasted
4 tbsp. sugar
2 tsp. salt
1/3 c. cooking oil
4 tbsp. white vinegar
4 tbsp. soy sauce

Lay saimien in 9x13 inch pan. Garnish with lettuce, green onion and meat. Mix sauce ingredients in bottle, shake well and pour over salad. Cover and refrigerate until serving time, at least an hour. Instead of saimien, "Chucka Soba" Shirakikau brand noodles can be used since they are a little thicker and therefore, easier to handle. Do not over cook.
