CREAMY POTATO PUFF 
4 c. hot mashed potatoes
8 oz. cream cheese
1 egg, beaten
1/3 c. finely chopped onion
1/4 c. chopped pimento (optional)
1 tsp. salt
Dash pepper

Combine cream cheese and potatoes; add rest of ingredients. Bake in 1-quart casserole for 45 minutes at 350 degrees.

(Make mashed potatoes the usual way. Mash; add milk, butter and whatever you usually do to mash potatoes.)
