SAUSAGE AND RICE CASSEROLE | |
1 lb. ground sausage, browned 1 c. celery, sliced 1/2 c. onion, chopped 1/4 c. green pepper, chopped 1/2 c. fresh mushrooms, sliced 1 (8 oz.) can sliced water chestnuts, drained 1 c. converted rice, uncooked 2 c. chicken broth 1/2 tsp. salt 1/8 tsp. pepper Put browned sausage into 2 1/2 quart greased casserole dish. In sausage drippings saute celery, onion, green pepper and mushrooms until lightly browned. Put in casserole dish. Add water chestnuts, rice, broth, and seasonings; mix well. Cover tightly and bake at 350 degrees for 1 to 1 1/2 hours or until rice is fluffy and tender. This is always so good and gets raves. I bring it to potlucks and get- togethers and always get request for the recipe. |
