1 box white Jiffy cake mix
1 (No. 2) can crushed pineapple
1 (8 oz.) cream cheese
1 pkg. instant vanilla pudding
1 3/4 c. cold milk
1 carton Cool Whip

Mix cake mix and bake in 9x13 pan 10-12 minutes in 350 degree oven. Do not over bake. Drain pineapple. Soften cream cheese, pudding mix and milk; mix with electric mixer. When thick, pour over cooled cake.

Sprinkle pineapple over pudding layer. Then spread Cool Whip. Sprinkle coconut over top. Refrigerate. Keeps 4-5 days.
